Turkey Sausage Pizza
For an easy variation on this pizza, substitute cauliflower for the broccoli, minced scallions for the fresh basil, and thyme for the oregano.
1 package (1/4 ounce) active dry yeast
1 teaspoon sugar
1-1/2 cups lukewarm (105° to 115°F) water
3-1/2 cups flour
1/2 teaspoon salt
Toppings & Sauce:
2 cups small broccoli florets
2 cans (8 ounces each) no-salt-added tomato sauce
1 large carrot, finely shredded
2 tablespoons chopped fresh basil
1/2 teaspoon oregano
1 cup shredded part-skim mozzarella cheese
1 small red bell pepper, cut into very thin strips
4 ounces Italian-style fresh turkey sausage, casings removed
1 Make the dough: In a small bowl, stir the yeast and sugar into 1/4 cup of the lukewarm water. Let sit until foamy, about 5 minutes.
2 In a large bowl, combine the flour and salt, mixing until well combined. Beat in the yeast mixture and remaining 1-1/4 cups water. Knead until the dough is smooth and elastic—about 5 minutes if you have a mixer with dough hook, or 10 minutes by hand. Transfer to bowl sprayed with nonstick cooking spray, cover with plastic wrap, and place in warm spot until almost doubled in bulk, about 45 minutes.
3 To make the toppings: In a large pot of boiling water, blanch the broccoli 2 minutes or until crisp-tender. Drain, rinse under cold running water to stop the cooking, and drain again.
4 In a large nonstick skillet, combine the tomato sauce, carrot, basil, and oregano, and bring to a boil over medium heat. Reduce the heat to low, cover, and simmer until the carrot is tender, about 5 minutes. Set aside to cool to room temperature.
5 Preheat the oven to 500°F. Punch the dough down and turn out onto a lightly floured surface. With a floured rolling pin, roll the dough out to a 12-inch round and fit into the prepared pizza pan, pressing the dough against the sides to form high edges. Spoon the sauce evenly over the dough and bake on the lowest shelf of the oven (or on the bottom of the oven if possible) for 10 minutes.
6 Sprinkle the cheese on top, then arrange the broccoli florets and bell pepper slivers on top. Crumble the turkey sausage over the pizza. Return the pizza to the oven and bake for 10 minutes, or until the dough is crisp and the sausage is cooked through.
