Tuna salad is one of those things that's hard to resist, so this recipe makes a single serving to help you with portion control. If you are making this for more than one person, just multiply the ingredients times the number of servings you need.
1 packet (3-1/2 ounces) water-packed albacore tuna
1 tablespoon light mayonnaise
1 teaspoon lemon juice
Pinch of black pepper
1 large plum tomato or 1/2 cup grape tomatoes, diced
2 scallions, chopped
1 teaspoon minced capers or pickled jalapeño pepper (optional)
In a small bowl, break up the tuna with a fork. Stir in the mayonnaise, lemon juice, and black pepper. Add the tomato, scallions, and capers or jalapeño (if using), and toss to mix.
