Tofu Salmon Spread

Perfect for breakfast or brunch or as an appetizer, this spread is great on crisp toast, bagels, or pita bread.

1 teaspoon unflavored gelatin
2 tablespoons cold water
15 ounces firm tofu, cut into large pieces
4 ounces smoked salmon, cut into large pieces
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
3/4 teaspoon salt
2 scallions, thinly sliced
2 tablespoons capers, coarsely chopped if large

1 In a small heatproof bowl, sprinkle the gelatin over the cold water and let stand until softened, about 2 minutes. Place the bowl in a pan of simmering water and let sit until the gelatin has dissolved, about 1 minute. Set the mixture aside to cool slightly.
2 In a food processor, combine the tofu, smoked salmon, lemon zest, lemon juice, salt, and gelatin mixture, and puree until smooth.
3 Add the scallions and capers, and pulse until combined. Chill 1 hour before serving. Makes 3 cups
