Tofu-Lemon Pepper Dipping Sauce

This is a good dipping sauce for artichokes or steamed asparagus. It’s also a flavorful stand-in for mayonnaise in salad dressings or as a sandwich spread.

12 ounces extra-firm low-fat silken tofu
1 teaspoon grated lemon zest
3 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon pepper
1/4 teaspoon salt

In a blender or food processor, combine the tofu, lemon zest, lemon juice, mustard, pepper, and salt, and process to a smooth puree. Store the sauce in the refrigerator.

Makes 2 cups servings.
