Spicy Steak & Peppers
If you like spicy food, add more hot pepper sauce. Or put a bottle on the table for diners to add as they please.
Other protein options: Make this with pork loin or chicken thigh.
3 teaspoons olive oil
1 large onion, halved and thinly sliced
4 cloves garlic, minced
4 green bell peppers, cut into 1/4-inch-wide strips
2 teaspoons hot pepper sauce
3/4 pound well-trimmed beef sirloin, halved lengthwise and cut crosswise into 1/4-inch-wide strips
2/3 cup water
4 teaspoons reduced-sodium soy sauce
2 teaspoons cornstarch
1 In a large nonstick skillet, heat 2 teaspoons of the oil over medium heat. Add the onion and garlic, and cook, stirring, for 3 minutes.
2 Add the bell peppers and hot pepper sauce, and cook, stirring, until softened, about 5 minutes.
3 Add the remaining 1 teaspoon oil and the beef, and cook until no longer pink, about 2 minutes.
4 In a small bowl, whisk the water and soy sauce into the cornstarch. Pour the mixture into the skillet, bring to a boil, and cook, stirring, until the sauce is slightly thickened, about 1 minute.
