Simple Broiled Flank Steak

The simplest of seasonings is all you need for lean flank steak, in this case a sweet-tart glaze of currant jelly and lemon juice. Cook the steak quickly under the broiler so it will stay juicy, and then carve it across the grain into thin slices. This helps make the pieces of steak tender.

2 tablespoons red currant jelly
1/2 teaspoon grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon dillweed
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound flank steak

1 In a small bowl, stir together the jelly, lemon zest, lemon juice, dillweed, salt, and pepper. Brush the mixture on both sides of the flank steak.
2 Preheat the broiler. Broil the flank steak 4 to 6 inches from the heat for 4 to 5 minutes per side for medium. Let stand for 10 minutes, then thinly slice across the grain. Makes 4 servings
