Sesame-Roasted Asparagus

Although many people prize skinny stalks of asparagus (sometimes referred to as “pencil grass”), they are not a good choice when it comes to roasting. For this dish, choose spears that are at least H inch in diameter.

1/2 cup water
2 teaspoons dark sesame oil
1 tablespoon reduced-sodium soy sauce
1-1/4 pounds asparagus

1 Preheat the oven to 450°F. In a 9 x 13-inch baking pan, combine the water, sesame oil, and soy sauce. Add the asparagus and toss well to coat.
2 Place in the oven and roast uncovered for 20 minutes, or until the water has evaporated and the asparagus are tender and lightly browned. Serve hot or at room temperature. Makes 4 servings
