1/4 cup orange juice
2 teaspoons olive oil
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
4 skin-on red snapper fillets (5 ounces each)
1 Prepare one of the dipping sauces. Divide the sauce among 4 small serving bowls and refrigerate until serving time.
2 Preheat the broiler. In a small bowl, whisk together the orange juice, oil, sugar, salt, oregano, and cayenne.
3 Place the fillets, skin-side down, on a broiler pan. Brush the orange juice mixture over the fish and broil 4 to 6 inches from the heat for 5 minutes, or until the snapper just flakes when tested with a fork. Serve with a bowl of sauce for each person.
