Moroccan Carrot Slaw
Ground cumin and coriander lend an exotic note to the creamy dressing for this slaw. In addition to being a delicious side salad, it makes a great topping for burgers and other sandwiches.
2/3 cup plain fat-free yogurt
1/4 cup lemon juice
1 tablespoon light mayonnaise
1 tablespoon sugar
1 teaspoon paprika
3/4 teaspoon cumin
3/4 teaspoon coriander
1/2 teaspoon salt
1 bag (10 ounces) shredded carrots
1 In a large bowl, stir together the yogurt, lemon juice, mayonnaise, sugar, paprika, cumin, coriander, and salt.
2 Add the carrots and toss to coat. Serve at room temperature or chilled. Makes 4 servings
