Use this as a sweet topping for pancakes, bananas, or grilled fruit. If you have access to a farmers’ market look for grade B maple syrup as it has a deep, maple flavor.
10 ounces lowfat soft silken tofu
1/2 cup maple syrup
2 tablespoons soy protein
1 teaspoon vanilla
In food processor combine tofu, maple syrup, soy protein, and vanilla and puree until smooth. Use as a topping for fruit, pancakes, or angel food cake.
