Kiwi Salsa
This colorful salsa can be prepared several hours in advance and refrigerated until serving time. Serve with fish or poultry.
4 kiwi fruits, peeled and diced
1/2 cup chopped red bell pepper
2 tablespoons minced scallion
2 tablespoons finely chopped cilantro
2 tablespoons fresh lemon juice
4 teaspoons honey
2 teaspoons finely chopped pickled jalapeno
In a medium bowl combine kiwi, bell pepper, scallion, cilantro, lemon juice, honey, and jalapeno. Stir to combine. Chill until serving time.
Makes Makes 1-1/2 cups servings.
