Homemade Fennel Sausage
These fennel-scented sausage patties have all of the delicious flavors of a good Italian pork sausage with way, way less fat.
2 slices (1 ounce each) whole-wheat sandwich bread
6 ounces turkey breast cutlet, cut into chunks
2 ounces lean pork loin, cut into chunks
1 teaspoon fennel seeds, crushed
1/4 teaspoon rubbed sage
1 teaspoon grated orange zest
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg white, beaten
1 Preheat the broiler. In a food processor or blender, process the bread just until coarse crumbs form. Transfer the crumbs to a large bowl.
2 Add the turkey and pork chunks to the processor (no need to clean the bowl) and process until coarsely ground, about 30 seconds.
3 Add the ground meat to the breadcrumbs along with the fennel, sage, orange zest, salt, pepper, and egg white, mixing thoroughly.
4 Shape the mixture into 8 round, flat patties. Broil the sausage patties 6 inches from the heat, turning once, until cooked through, about 6 minutes.
Makes 8 sausage patties servings.
