Green Herb Broth
Cilantro roots pack a lot of cilantro flavor. If you can get cilantro with roots, definitely add them to the stockpot. Wash them well as they frequently have soil clinging to them.
2 cups packed basil leaves
2 cups packed cilantro leaves and stems
1 bunch scallions, thickly sliced
3 slices (1/2 inch thick) fresh ginger
4 cloves garlic, peeled and smashed
3 strips of lime zest
1/4 teaspoon salt
8 cups water
1 In a large saucepan or stockpot, combine all the ingredients and bring to a boil over medium heat. Reduce to a simmer, partially cover, and cook until the broth is flavorful, about 45 minutes. Strain and discard the solids. Keep the broth refrigerated.
Makes 6 cups servings.
