Garlic Broth

Don't be alarmed by the large amount of garlic, this broth has a mellow flavor that can take the place for a vegetable or chicken broth in any recipe. For a more intense garlic flavor, leave the cloves unpeeled but cut several (or all) of them in half.

5 large heads of garlic (1 pound), separated into cloves but unpeeled (2-1/2 cups)
2 stalks celery, thickly sliced
3 strips of lemon zest
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/4 teaspoon salt
8 cups water

In a large saucepan, combine the garlic, celery, lemon zest, rosemary, thyme, salt, and water. Bring to a boil over high heat. Reduce to a simmer, partially cover, and cook 1 hour or until the broth is full-flavored. Strain and discard solids.

Makes about 5 cups servings.
