Fresh Strawberry-Ginger Chutney

Strawberries, with their sweet and slightly tart flavor, make an interesting chutney. Serve alongside grilled poultry.

2 medium onions, coarsely chopped (1-1/2 cups)
1/4 cup chopped fresh ginger
1 red bell pepper, cut into 1/4" dice
1 green bell pepper, cut into 1/4" dice
1/2 cup cider vinegar
1/4 cup honey
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon black pepper
1/2 teaspoon salt
4 cups quartered strawberries
1 cup corn kernels
1/2 cup raisins

1. In large nonaluminum saucepan, combine onions, ginger, bell peppers, vinegar, honey, cinnamon, allspice, and black pepper. Bring to a boil.

2. Add 1/2 cup of the strawberries and lightly crush with a potato masher or wooden spoon. Add corn and raisins and simmer 10 minutes until syrupy. Cool to room temperature.

3. Stir in remaining 3-1/2 cups strawberries. Serve at room temperature or chilled.
