Fresh Fruit Gelatin

Between the fresh orange juice, sliced fresh strawberries, and canned mandarins, this light, refreshing dessert has heaps of vitamin C.

1 envelope unflavored gelatin
2 cups fresh orange juice
1 teaspoon grated orange zest
1/4 teaspoon vanilla extract
1 cup canned juice-packed mandarin oranges, well drained
1-1/4 cups sliced strawberries

1 In a small saucepan, sprinkle the gelatin over 1/2 cup of the orange juice. Warm the mixture over very low heat, stirring just until the gelatin has dissolved, then remove from the heat.
2 Transfer to a medium bowl. Stir in the remaining 1-1/2 cups orange juice, the orange zest, and vanilla. Refrigerate until the mixture just starts to gel, about 1 hour.
3 In parfait glasses, spoon alternating layers of mandarin oranges, orange gelatin and strawberries. Repeat the layering, ending with the strawberries on top. Chill until set, 1 to 2 hours. Makes 4 servings
