This sauce can be served with either sweet or savory dishes. It’s equally delicious over frozen yogurt or alongside grilled chicken or pork.
1 cup pineapple juice
3 tablespoons honey
1/2 teaspoon cinnamon
1/2 teaspoon chili powder
1/8 teaspoon ground cloves
1 fresh pineapple (about 3 pounds), peeled, cored, and coarsely chopped
1 In a large nonreactive skillet, stir together the pineapple juice, honey, cinnamon, chili powder, and cloves. Bring to a boil and cook, stirring frequently, until reduced by half, about 7 minutes.
2 Stir in half of the chopped pineapple and cook, stirring frequently, until thickened, about 5 minutes.
3 Remove from the heat and let cool to room temperature. Stir in the remaining chopped pineapple. Serve at room temperature or chilled. Store the sauce in the refrigerator.
Makes 2-2/3 cups servings.
