Dilled Tuna Burger

Instant mashed potato flakes take the place of the breadcrumbs that are usually used to help bind a tuna burger together.

1/3 cup plain fat-free yogurt
1 teaspoon grated lemon zest
2 teaspoons fresh lemon juice
1/4 cup instant mashed potato flakes
2 scallions, thinly sliced
1/3 cup minced fresh dill
2 tablespoons pickle relish
2 cans (6 ounces each) water-packed albacore tuna, drained

1 In a large bowl, combine the yogurt, lemon zest, lemon juice, and mashed potato flakes, stirring until moistened.
2 Add the scallions, dill, and pickle relish, and stir until well combined. Add the tuna and combine. Shape the tuna mixture into 4 patties.
3 Preheat the broiler. Spray a broiler pan with nonstick cooking spray. Broil the tuna patties 4 to 6 inches from the heat, without turning them over, until a crust has formed and the burgers are heated through, about 8 minutes. Makes 4 servings
