Silken tofu makes a wonderful salad dressing. The rich creaminess of the tofu is accented in this dressing by spicy Dijon mustard, chopped capers, and fresh dill. In addition to using this as a salad dressing, it would make a tasty sauce for fish or chicken.
1 cup (8 ounces) firm low-fat silken tofu
1/4 cup cider vinegar
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup capers, drained and minced
1/4 cup chopped fresh dill
In a food processor or blender, combine the tofu, vinegar, mustard, salt, and pepper, and puree until smooth. Stir in the capers and dill. Store the dressing in the refrigerator.
Makes 1-1/2 cups servings.
