Super-quick and easy to prepare, these fillets are delicious with a storebought chutney or a homemade fresh fruit salsa.
2-1/2 teaspoons curry powder
3/4 teaspoon coriander
3/4 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
4 red snapper fillets (5 ounces each), skinned
2 teaspoons olive oil
1 Preheat the broiler. In a small bowl, stir together the curry powder, coriander, sugar, salt, and pepper.
2 Rub the curry mixture into one side of the snapper fillets. Brush the fish with oil.
3 Broil the fish, curry-side up, 4 to 6 inches from heat for 5 to 7 minutes, or until it just flakes when tested with a fork. Makes 4 servings
