Breakfast Fruit Salad
You can make this salad a couple of hours ahead of time, but wait until just before serving to add the bananas so they don’t get mushy.
3 tablespoons fresh lime juice
1 tablespoon honey
3 tablespoons minced fresh mint
1/2 teaspoon tarragon
2 cups cantaloupe chunks
1 cup pineapple chunks (fresh or canned)
1 cup cherries, halved and pitted
1 banana, thinly sliced
1 In a large bowl, whisk together the lime juice and honey. Add the mint and tarragon, and stir until combined.
2 Add the cantaloupe, pineapple, cherries, and banana, and toss gently. Serve the salad at room temperature or chilled. Makes 4 servings
