Beet, Pear & Endive Salad
Apple juice concentrate and Dijon mustard make a fat-free dressing for this sweet and savory salad.
1/4 cup frozen apple juice concentrate
4 teaspoons Dijon mustard
1 tablespoon cider vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (15 ounces) whole beets, cut into 1/2-inch chunks
1 pound Bartlett pears (about 2), quartered and thinly sliced
2 Belgian endives, thinly sliced crosswise
3 tablespoons coarsely chopped walnuts
1 In a large bowl, whisk together the apple juice concentrate, mustard, vinegar, salt, and pepper.
2 Add the beets, pears, and endive, and toss to combine. Serve the salad with the walnuts sprinkled on top. Makes 4 servings
