Delicious just as they are, these baked bananas could be converted into a banana split by topping them with a scoop of low-fat frozen yogurt and a sprinkling of toasted almonds or walnuts.
1/3 cup packed light brown sugar
3 tablespoons lime juice
1/4 teaspoon nutmeg
4 bananas (1 pound) peeled
1 Preheat the oven to 350°F. In a 7 x 11-inch glass or ceramic baking dish, stir together the brown sugar, lime juice, and nutmeg.
2 Add the bananas, turning them to coat with the brown sugar mixture. Place in the oven and bake for 10 minutes.
3 Turn the bananas over and bake for 7 minutes longer, or until tender. Serve the bananas warm, with the sauce spooned on top. Makes 4 servings
